Back To Reality!
Well, we’ve been home for one week…and things have been VERY different from our 2 month summer vacation in Sardinia! Those endless summer days at the beach, going out for dinner with friends and family and eating way too much gelato are long gone!
My days are now filled with lesson plans, meal preparation (which I got out of for 2 months thanks to my mother-in-law!), cleaning the house and putting everything back in order…the list goes on and on! I just can’t help but reminisce…
Here’s where I was about a week ago!

Alright, I may be stretching the truth just a bit…not ALL of our meals this week have been as boring as cereal.
I have to admit that “Holly Homemaker” got the best of me (regardless of the jet-lag and lack of time on my hands) and so I actually managed to prepare a few “proper” meals!

Caramelized Onion Lentil and Raisin Quinoa (I omitted the raisins and added some steamed salmon instead!
Mushroom Risotto (no recipe posted just yet!)
I also made some “Healthy Coconut Carob Puffed Rice Bars” treats for myself!
After such a long and busy week I think it’s safe to say that I no longer have the time to reminisce about my vacation in Sardinia!
