Agave Lime Macerated Strawberries
The other day, while browsing around at the grocery store (one of my favourite past times) I spotted some organic strawberries on sale. Initially, I didn’t give them a second glance (it’s not the season after all), but when I did they just looked too delicious to pass up.
This strawberry fruit cocktail (as we call it) instantly came to mind. It’s the perfect refreshingly sweet snack on a hot summer’s day, so with this dreary weather going on as of late I figured it would liven up the mood in our house.
Let me preface by saying that the original recipe is for adults only. Now, I’m not a big fan of liqueur in general, but I must say that adding a splash (or more!) of cognac or brandy in the mix really spices these strawberries up…lending to the “cocktail” part of this sweet fruity treat! Trust me, after you taste this you might just gobble it up (before your little one even has a chance to try it) so I suggest doubling the recipe so there are some leftovers for yourself!
It’s a super simple recipe, consisting of just THREE ingredients (the fresher, the better!).
(These quantities taste just right to us, however you may want to alter the amounts to your own preference.)
1 cup organic strawberries
1 tsp. freshly squeezed lime juice
1 tsp. agave nectar (or sweetener of choice)
Chop strawberries into bite-size pieces and place in a small bowl.
Drizzle agave nectar over the strawberries and add freshly squeezed lime to the bowl and stir to combine.
Let sit in the fridge for at least one hour to allow the flavours to combine and soften the strawberries (aka. macerate!).
You’ll end up with a lovely, sweet strawberry “juice” with just a little kick from the lime.
Serve alone, with a dollop of fresh Greek yogurt or puree and serve as a sweet strawberry treat for baby!
My son’s new favourite thing to do is to lick his plate clean after eating (taking tips from Jack, maybe?!)…
…but this time really took the cake! He loved his snack SO much I could hear him slurping up the remnants for 10 minutes!
