Banana Almond Butter Oatmeal
This is my my son’s favourite version of oatmeal! He goes to town on it! The almond butter adds a creaminess to the oatmeal and the banana just the right amount of sweetness. If you use a very ripe banana you could probably even omit any addtional sugar.
My son loves almond butter so I added quite a bit to this recipe…if you don’t want the nut butter to overpower the flavour of the oatmeal just add a tablespoon or two.
Ingredients:
(Makes about 1 cup)
1 cup milk
1/2 cup instant oats
1/4 cup almond butter (or other nut butter)
1/2 ripe banana, mashed or chopped
1-2 tbsp. maple syrup (or sweetener of your choice)
1/8 tsp. cinnamon
In a small saucepan, heat milk on medium-high heat until it just comes to a boil.
*TIP: Keep your eye on the milk as it can burn quickly! Reduce the heat as soon as the milk starts bubbling along the side of the saucepan.
Reduce the heat to simmer, add the oats and cinnamon.
Cook on low heat for about 5 minutes or until the milk has evaporated and the oats have thickened.
Once the oats have thickened, take off the heat and stir in almond butter, banana, and maple syrup.
Garnish with a sprinkle of cinnamon, an extra dollop of almond butter (because a 1/4 cup might just not be enough!!) and top serve with some fresh banana slices on the side.
This recipe is meant for babies, but you might want to sneak a spoonful yourself!
