Chicken Pesto Mozzarella Quesadilla

Yesterday I had my heart set on making these yummy quesadillas for dinner. Initially, the chicken was omitted from the recipe because
I was too lazy to defrost and cook some I’ve been on bed rest and should be “resting!” (Standing at the stove for 20 minutes seemed a little too ambitious!)
You’ll never guess where the chicken came from…
the babysitter my dad brought my son back home in the afternoon he had a pre-cooked roasted chicken in tow!! What are the chances?! (Actually, it happens quite often that my mom and I are thinking the same thing. Call it ESP, call me crazy, but its true!
This is a quick and easy recipe to make. If you don’t have pesto you could try substituting it with another spread of your choice.
Vegetarian? Why not swap the chicken for finely chopped tofu?!
(Makes 1 small quesadilla)
1 tsp. homemade pesto
1 small tortilla shell
1/2 cup cooked chicken
1/2 cup grated mozzarella
1/2 tsp. extra-virgin olive oil (or cooking spray)
Heat olive oil in a medium saucepan on medium heat for about 1-2 minutes.
Place the tortilla shell (flat) in the pan. Spread the pesto on half of the tortilla…
…then add the chicken and mozzarella. (I like to press everything down with a spoon so all the ingredients “stick” together). Fold the tortilla in half.
Once folded, cook for 2-3 minutes or until slightly browned (you don’t want it too browned as it might be too crunchy for baby to eat!).
*TIP: If you have a hamburger press they work wonders! If not, simply press down on the tortilla with a spatula every so often to flatten it.
Flip the tortilla and cook on the other side for 2-3 minutes. Once browned, remove from the heat and let cool slightly before cutting.
Doesn’t that look delicious?!
My son could not get enough of his quesadilla! At first, he was a little perplexed by the strange looking “panino” that I put in front on him…but after one bite, he was hooked! (Not to mention, it was so easy for him to eat and surprisingly NOT messy!)
*On a side note, I made my tortilla with a brown rice wrap and soy cheddar cheese and it was just as delicious!
