How can something so decadent be so good for you? Easy…they’re homemade! These chocolate coconut larabars are 100% raw and 100% delicious! These are easy to make and just as easy to devour, packed with decadent chocolate, sweet coconut and a variety of dried fruits and nuts.
Every time I come up with a new batch of energy bars I seem to forget that the last ones I made were my “favourite.” (Each new batch seems to taste better and better!) I LOVE coconut (and of course, I love chocolate) so you can imagine how excited I was when I whipped up this recipe!
(Yields 6 2 x 3 inch bars)
1 cup shredded sweetened coconut
1 cup dried Medjool dates (about 8-10 VERY large dates)
1/2 cup cashews or other nut
1/4 cup chocolate chips, melted
1-2 tbs. raw honey (or other liquid sweetener)
1 tsp. vanilla extract
1/8 tsp. salt
*If you’re not a fan of super-sweet treats you can omit the agave or substitute the sweetened coconut for unsweetened.
Place all the ingredients in a large food processor and blend until well combined and the dates and nuts are finely ground.
The mixture should be somewhat crumbly but still pack together easily without falling apart. If the mix is too crumbly add more coconut oil (or agave if you prefer sweeter bars) and if it’s too sticky just add 1-2 tbsp. at a time of walnuts, pulsing each time.
Place the mix in a small pan (I use a biscotti pan), lined with parchment paper and press down firmly so the mixture is uniform and compact.
Leave in the fridge for at least 2-3 hours to cool and firm up.
Remove by lifting the parchment paper then peeling off the back of the bars. Cut into desired portions. (I cut a few larger bars for my husband and I and some smaller squares for my two-year old son).
