Creamy Tropical Fruit Salad Smoothie

There’s not much to say about this recipe-except that it’s delicious! I literally had to stop myself from eating all of it after preparing it for my son. (I even caught my husband sneaking my son’s leftovers the following day!!) Who would have thought that a recipe intended as baby food would turn into an adult snack?!!

4 lg. organic strawberries
1/2 banana
1/2 mango
3 tbsp. greek yogurt
1/2 tsp. vanilla
1 tbsp. shredded unsweetened coconut (optional)
1/4 cup milk (or substitute)

I’ m a vinegar fanatic…I use that stuff for everything! Did you know you can use it to clean fruits and vegetables? It helps kill bacteria! I usually mix about 1 tbsp. of distilled white vinegar with 2 cups water. Let the fruits or veggies sit for a few minutes in the solution then remove and rinse thoroughly.

Cut fruit into 1-2 inch pieces. (They don’t have to be uniform pieces as they are going to be pureed anyway!).

To puree the fruit you can either use an immersion blender (as I did) or put all the fruit into a small food processor.

Puree until combined.  The consistency will be somewhat runny so if you prefer a thicker smoothie simply reduce the quantity of milk or add a little at a time until you get the desired consistency.

*TIP: You can also add some baby cereal to the smoothie to thicken it just before serving to baby.
