Dairy-Free Shamrock Smoothie

Happy St.Patrick’s Day!
On that note…how about a nice, healthy, green, kid-friendly (i.e., no alcohol!) smoothie to celebrate?
I’m quite aware of the fact that you’ve probably seen enough GREEN on every food blogger’s website today to last you a lifetime…
I’d ALSO like to think that if you’re a Bites for Babies’ repeat visitor you’ll agree that MY version of this green treat is WAY more tempting than any other ones you’ve seen
What a great way to incorporate greens, in this case spinach, into your picky toddler’s diet! (Word to the wise…If your toddler is super-finicky a regular food processor might not disguise the spinach enough for it to go unnoticed) ;-(
My son however didn’t seem to be bothered by it (and I get to, once again, relish in the fact that I don’t need to purchase an expensive Vitamix just yet!) If you DO have a vitamix, go ahead and throw some fresh kale in there as well!
(Yields about 1 1/2 cups)
1/2 ripe hass avocado
1 large ripe banana, fresh or frozen and chopped into quarters
1 cup organic spinach
1/2 cup – 1 cup unsweetened coconut milk (depending on desired consistency)
1 tbs. raw honey or organic maple syrup
1/4 tsp. cinnamon (optional)
1/8 tsp. turmeric powder
toasted coconut flakes for garnish, if desired
Puree all ingredients in a blender or food processor until fully combined and smooth.
*TIP: Start with 1/2 cup of coconut milk then add more depending on desired consistency.
Garnish with toasted coconut flakes for added sweetness and crunch and serve immediately.
