Nothing says summer like peaches! Fresh, juicy, sweet…and even more delicious roasted!
I love adding variety to my kids’ snacks by mixing fruit with different herbs and spices. Both of my children love fruit so I try to offer as many different fruits as possible in a variety of different ways.
Lately, we’ve been eating tons of peaches! I’ve done simple grated peaches, grilled peaches, peaches with Greek yogurt and cinnamon, peaches with ricotta and honey, peaches with apples and bananas, the list goes on and on.
I think it’s safe to say it was time to take it up a notch…and this recipe sure did that!
This delectable summer treat has a combination of tart, sweet and caramelized goodness, with a hint of fresh sweet mint.
(Yields about 1 1/2 cups)
4 lg. ripe peaches
*2 tbsp. raw organic honey
1 tbsp. freshly chopped mint (or more for garnish, if desired)
pinch of cinnamon (optional)
*Substitute with plain sugar of choice for babies under one year old.
Set oven 375 degrees.
Wash and peel peaches then cut along the pit into four sections. Halve each section then place on a large baking sheet covered with parchment paper. (Basically, the peaches should be chopped into eighths!).
Drizzle the honey and sprinkle the mint over the peaches.
Cook for 25-30 minutes or until soft and fork tender. The peaches should be bubbling and caramelized before you remove them from the oven.
*TIP: Cook the peaches for an extra 5-10 minutes until they are mushy and avoid the extra step of mashing or pureeing them for baby.
Remove from the oven and let cool for a few minutes before serving.
Serve chunky, puree in a small food processor or mash with a fork.
Serve alone garnished with freshly chopped mint leaves or add a dollop of plain Greek yogurt to balance out all that sweetness.
