Mango and Banana Parfait

This morning when I woke up I could sense that it was going to be a lazy day! Morning snack was not looking promising…the “go-to” snack of mixed yogurt and fruit. However, I am proud to say that I got a moment of inspiration and transformed what could have been a boring snack into a masterpiece (although I highly doubt my son noticed the difference!!)

“Parfait” may sound pretentious but it is actually easy and fun to make! It is basically a term used to describe different types of layered food in a dish. Why not just try it out for the fun of it?! You might be surprised at your culinary masterpiece and never go back to just mixing everything in the same old bowl again (or maybe not!) Don’t have mango or banana in the fridge, just replace them with another of your favourite fruit combinations.

(Makes 1 cup)

This recipe makes about two portions (or more depending on how much your baby eats!) My son could have probably polished off the entire thing all at once-nonno and nonna would be proud! ;-)

1/2 cup Greek yogurt
1/4 cup diced (or mashed) ripe banana
1/4 cup diced (or grated) ripe mango
1/2 tsp. cinnamon (optional)

Add cinnamon to yogurt and stir.
Layer 1/4 cup yogurt, then 1/4 cup mixed bananas and mangoes, and repeat with remaining portion.
Top with pumpkin spice muffin bites then mix in to add more texture and sweetness to the parfait!

“DID YOU KNOW…?”
Greek yogurt has half the sodium and almost double the protein of regular yogurt. It can also be used in cooking as it does not curdle when heated like regular yogurt.
