Pesto Caprese Grilled Cheese Sandwich

Grilled cheese sandwiches have become one of my go-to meals (other than hummus) when I’m in a rush (or am too lazy to make anything remotely time-consuming!).
This recipe is proof that sometimes the simplest, and of course freshest ingredients (in this case, only three: pesto, tomatoes, and mozzarella) can turn a regular sandwich into an extraordinary one!
Gooey mozzarella cheese, fresh organic tomatoes, and nutty pesto are a fantastic flavour combination.
Just the other day I made a huge batch of pesto (with fresh, organic basil from our garden!). I usually freeze it in individual portions so I can grab some (usually at the last minute) to add to a meal. My son loves pesto so I knew this grilled cheese would be a hit!
Grilled cheese sandwiches are like pasta…a simple staple recipe that can be turned extraordinary but adding a variety of simple, tasty ingredients. Here are some of our other favourite sandwiches:
2 slices bread of choice
about 1/2 mozzarella (packed in water)
1 small organic tomato
Drain the mozzarella and slice (thickness as desired) then slice the tomatoes thinly.
*TIP: Squeezing the excess juice out of the tomatoes prevents the sandwich from becoming soggy!
Spread the pesto evenly onto one piece of bread. Top with the mozzarella and tomatoes then add the other piece of bread and flatten slightly with the palm of your hand.
In a small frying pan on medium heat, heat oil for 1-2 minutes then add the sandwich. Press down with a spatula (or use a hamburger press) so the ingredients combine while heating up.
Heat through for about 2-3 minutes on both sides or until the bread is crisp and golden and the cheese is fully melted.
Serve immediately or let cool for a few minutes before serving.
Hot, warm or cold…this grilled cheese is delicious either way!
