Pesto “Caprese” Quinoa Salad
I’m not sure if this qualifies as a “recipe”because it is just so simple and quick to make! All you need are a few fresh ingredients to make this delicious quinoa salad that the entire family will love!
I had some leftover quinoa from yesterday’s lunch, a piece of mozzarella in the fridge and a garden full of fresh basil and tomatoes calling my name…how could I go wrong?! As for measurements, you can add as much or as little condiment as you want. Make an extra portion for tomorrow’s lunch or better yet, make extra for the entire family!
Here’s what I used for one portion:
About 1/2 cup pre-cooked quinoa
Homemade pesto or good-quality store-bought pesto
Fresh tomatoes, finely diced
About 1/2 mozzarella, finely diced
Extra-virgin olive oil

Finely dice tomatoes and mozzarella.
Add them to the quinoa with a dollop (or as much as you want!) of pesto and mix well.
Add a drizzle of good quality extra-virgin olive oil…and serve! YUM!
