Tofu Scramble

Scrambled eggs can’t get any easier than this!  The tofu adds an extra creaminess and thickness to the egg!  *Mess alert! If you decide to let baby feed himself/herself: beware! It is very crumbly…but the yumminess will make up for the mess!

2 tbs. mashed tofu
1 egg yolk
tsp. water
1 tsp. grated parmesan
1 tbsp. olive oil or butter
finely chopped chives or tarragon (optional)

Cut a slice of tofu about 1 inch thick.  Mash it with a fork and add it to eggs.

Separate the egg yolk from the white. To do this simply move the egg yoke back and forth from each egg shell and let the white drain.

Place egg yolk in a small bowl with water, grated parmesan, and chopped chives or tarragon then whisk.

Heat olive oil or butter in a pan on medium heat. Add mixture and cook for about 3 minutes.

Mash into tiny pieces to feed baby or leave some chunks for baby to feed himself!
